Chef Waldy with experienced butchers at DeBragga & Spitler Meat Company spent six months of trial and error to develop the perfect blend for High Heat beef burgers. 75% Certified Angus Beef Shoulder ground daily with 25% Dry Aged (30 days) Brisket create the perfect flavor profile, and fat to lean ratio for our Smoked Stack Burgers. The loosely ground burgers are first seared at high temperature on a cast-iron griddle, transferred to a grill, and then covered by a black iron dome — grilling and smoking simultaneously. Beside a charred and caramelized exterior, the burgers have a smoky flavor that is only obtained by this unique cooking method.
